If you are obsessed with rubbish TV like we are, then you would have come across the Real Housewives franchise, and from it the straight talking, self-made millionaire Bethenny Frankel. She's the founder of the Skinnygirl brand as has built an empire on creating very yummy and also waist-line friendly versions of your favourite treats (even cocktails!).
Here are three of our favourites from her recipe book The Skinny Girl Dish (and coincidentally, when combined they make a fantastic guilt-free party menu).
Low-Fat Mock-a-mole (serves 6-8)
2 tablespoon cilantro (finely chopped) - To garnish (Parsley is fine too)
1 tablespoon red onion chopped (finely chopped)
1 cup green peas
2 teaspoon fresh lime juice
1 teaspoon Worcester sauce
Dash of Tabasco sauce (use more if you like your guacamole spicy)
1 teaspoon garlic salt
Pepper (to taste)
1 tablespoon chopped fresh parsley (flat leaf or curly)
1 cup chopped tomato
Using a immersion blender, blend the above ingredients, leaving visible chunks.
Sprinkle with fresh cilantro and serve with healthy organic tortilla chips.
