Cheers! The long Island iced tea’s prettier little sister

The Long Island Iced Tea is a rather infamous cocktails. Chock full of enough booze to get most people sozzled off just the fumes, this potent concoction is one I normally avoid with a ten foot pole for fear of flashbacks concerning a different type of pole, and some very awesome bad dancing! Hey, don’t judge me!

But, despite it’s cousin’s prior debauchery, this strawberry iced tea is just too darn pretty to NOT have at least a sip or three of, don’t you think?

INGREDIENTS: 

1.8 liters hot black tea
1/3 – 2/3 cup superfine sugar
1/4 to 1/2 cup lemon juice, freshly squeezed
900g strawberries, fresh, washed and hulled
Vodka , Tequila or gin to taste

 

INSTRUCTIONS

1 – Pour the tea into a ceramic or glass mixing bowl. Add the 1/3 (or more) cup of sugar and the lemon juice. Stir through to dissolve the sugar. Test to see if it requires additional sweetening or lemon juice and adjust accordingly.

2 – Set aside to cool.

3 – Put several strawberries to one side for garnish. Puree the remaining strawberries. Push the puree through a fine-sieve to remove pips, etc. Press on the mixture with the back of a wooden spoon.

4 – Once the tea has cooled, add the puree and mix through thoroughly. Place in the refrigerator for at least a half hour to chill.

5 – Add a nip of your favourite white spirit and a few ice cubes to each glass, fill with strawberry iced tea mix, garnish with one of the remaining strawberries. Enjoy!
