When it comes to non-meat proteins I can never go past chickpeas. They're one of the most versatile legumes out there and can be ground down into a dip (hello, hummus!), fried for a crunchy popcorn-like texture, added to curries and soups, fashioned into burgers and fritters or eaten au naturale in your salad. Does it get much better than that? No, it doesn't.
Probably the most quick and simple way to enjoy chickpeas for your lunch, this salad combines cherry tomatoes, corn and chickpeas with fresh herbs and a tangy vinaigrette for one of those salads that just keeps getting better. Seriously, make a big batch and watch how much more delicious it gets with each passing day.
